Tequila takes about two seconds to drink and up to 14 years to make. The plant behind it has to be grown in designated regions of Mexico, harvested entirely by hand, and since 1964, only one specific variety has been legally allowed in the bottle. What plant is used to make tequila?

Blue agave is the only plant legally allowed to make tequila, and skilled workers called jimadores harvest them entirely by hand with razor-sharp blades. Tequila has the same geographic protections as champagne, so if you make it outside certain regions in Mexico, it's just called a weekend of regret. Fourteen years of patience for a single plant, and most bottles don't last the weekend.
