Cinco de Mayo started right here in America, proving we'll gladly borrow any excuse to throw a proper fiesta. And after the third margarita, you've gotta love how the mariachi music gets louder, the tacos taste better, and somehow everyone thinks they've become fluent in Spanish. Most people think it's Mexico's Independence Day (you've got a few more months of waiting for that), but we've turned it into our favorite celebration of Mexican-American culture, one belly full of tacos al pastor at a time.
