Blue agave is the only plant legally allowed to make tequila, and skilled workers called jimadores harvest them entirely by hand with razor-sharp blades. Tequila has the same geographic protections as champagne, so if you make it outside certain regions in Mexico, it's just called a weekend of regret. Fourteen years of patience for a single plant, and most bottles don't last the weekend.
